Queso Cotija is the only Mexican cheese named after its place of origin: Cotija de la Paz in Michoacan. It's also one of the oldest Mexican cheeses and is itself an aged cheese or "queso añejo." When it's freshly made from raw cow's milk, it's soft and crumbly like Feta cheese and delish. But it's also great older and drier, like Parmesan, especially over chilaquiles, sopa de tortilla and the classic: refried beans.
